Recipe for High Holidays – Cookies & Cream Cheese Cake

Adrianne’s Amazing Cookies and Cream Cheesecake
This cheesecake, made by Adrianne Levy, wowed the crowd at Ethan Levy’s confirmation ceremony in 2015.

Cookie Crust:
11 Oreo cookies, smashed
3 T Butter or margarine, melted
Stir together cookies and butter until combined. Press firmly into a greased 9” spring form pan.

Cheese Cake Filling:
24 oz Cream cheese
1/3 cup Sugar
5 tsp Cornstarch
3 Eggs
1 Egg yolk
2/3 c Whipping cream
1/3 cup Dark crème de cacao
2 tsp Vanilla
1 cup Semisweet chocolate chips, melted
4 Oreo cookies, coarsely chopped
In a large bowl combine cream cheese, sugar and corn starch. Beat with an electric mixer until smooth. Add eggs and egg yolk 1 at a time, beating well after each addition. Stir in whipping cream, crème de cacao, vanilla. Stir in melted chocolate. Fold in cookies.
Pour into prepared 9” spring form pan. Bake at 350 for 15 minutes. Lower the temperature to 200 and bake for 1 hour and 10 minutes or until the center no longer looks wet and shiny. Remove the cake from the oven and run a knife around the inside edge of the pan. Turn the oven off; return the cake to the oven for an additional 1 hour. Chill uncovered overnight.

Chocolate Cookie Topping
1 cup Whipping cream
1 T Sugar
4 Oreo-type cookies
In a small bowl beat whipping cream and sugar with an electric mixer till stiff peaks form. Spread whipped cream mixture over cheesecake. Sprinkle with cookies. Chill until serving time. Makes 12 – 18 slices.
