POTATO LATKES
Recipe from Linda Federman
4 large potatoes (I use 2 russet & 2 Yukon Gold), 1/2 peeled
2 shallots
2 large eggs, beaten
1/4 cup flour or matzo meal
1 tsp. Kosher salt
1/4 tsp. fresh ground pepper
oil for frying
sour cream & applesauce (of course)
Grate potatoes & shallots together (shallots keep the potatoes from turning black). Squeeze with cheese cloth till dry. Mix in beaten eggs, flour or matzo meal, Kosher salt & fresh ground pepper.
Heat oil over medium/hi heat.
Drop spoonfuls of mixture & flatten with spatula. Fry till brown on bottom, then turn & brown other side. Drain on paper towels.
Serve with applesauce & sour cream
By the last couple of nights, I use 2 white potatoes & 2 sweet potatoes for a change-up!
Can be reheated in 350 degree oven.
